Pumpkin Spice Cupcakes


Makes 24 cupcakes


What you need....


2 cups granulated sugar


3 cups Bob’s Red Mill All Purpose Flour


1 teaspoons salt


2 teaspoons baking soda


3/4 cup avocado oil


1 1/2 cups almond milk


1 Tablespoon vinegar


2 teaspoons vanilla


1 (15 oz) can pumpkin purée/filling


1 teaspoon ground cinnamon


Pinch, ground nutmeg




How to make this...




1. Preheat the oven to 350 F.


2. In a stand mixer fitted with the whip attachment, mix the flour, sugar, the baking soda, salt, cinnamon and nutmeg on low to sift the ingredients.


3. In separate bowls, add the vinegar to the almond milk, and the vanilla to the oil.


4. With the mixer on low, add the almond milk mixture and the oiil mixture. Mix until fully incorporated.


5. Add the pumpkin and mix until fully incorporated.


6. Add batter to cupcake papers, fill 3/4 full.  Bake at 350F for 18 TO 20 minutes.


7. Let cupcakes cool completely before adding icing.
