Preheat oven to 400 degrees F and lightly spray a nonstick cookie sheet with pan srpay.
1 cup Bob’s Red Mill Gluten Free Baking Mix
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon Cajun seasoning
1 egg
1/2 cup whole
3/4 cup cheddar cheese, shredded
1 Tablespoon fresh dill, finely chopped
1 Tablespoon fresh parsley, finely chopped
1/2 stick cold butter cut into small cubes
Whisk Gluten Free Baking Mix, salt, baking powder and Cajun seasoning in a bowl to sift.
Cut in cold butter with a fork
Add the egg, milk, dill, cheese and parsley and stir with a spatula until fully incorporated.
Spoon dough onto the cookie sheet and bake at 400 degrees F for 25 to 30 minutes.
